Bay Village Resort News
Its been
a very busy summer holiday season, and as expected there
has been minimal disruption to guests during this time.
Development has started in earnest now that school has
returned, and as our existing units are free standing,
once again we expect minimal disruption to house guests.
The outdoor deck area adjoining the pool has been well
received and the heated pool (to Shire regulations),
pool spa and saunas remain available and unaffected. A
children's playground is conveniently located on the
foreshore - just a 200 meter walk down Dunn Bay Road
(until the resort's new play area is completed).

Cape Lodge,

by making the prestigious annual Conde Naste Traveller

The food at the

Undoubtedly the most impressive caves are the stunning
Mammoth,
Lake and Jewel. Few

encountered out on the Leeuwin-Naturaliste Ridge. You'll
emerge marvelling at having experienced the forces of
time, wind, water and stone at work. The clock stands
still in the caves and aeons recede before our eyes. For
well over a century travellers have come to witness the
vast tunnels, fossil remains and brilliant crystalline
formations found the length and breadth of the Ridge.
Our caves are recognised internationally for their great
beauty, pristine condition and extraordinary
decorations. Mammoth, Lake and Jewel have recently seen
up-grades, further enhancing their wonderful appeal.
IL DUOMO ARRIVES AT THE MELTING POT
Gerry Reilly is celebrating the installation of his
brand new furnace, dubbed “Il Duomo”, at the Melting Pot
Glass Studio in
Margaret River. The Melting Pot invites all locals,
collectors and visitors to come and see an exhibition of
new glass designs during February. Reilly is now
creating new designs from Il Duomo’s 150kg crucible of
molten crystal glass. He will be exhibiting with
Austrade at Ambiente, a large exhibition in Frankfurt,
Germany from February 11-15 this year. Reilly was
invited to participate in Ambiente after successfully
exhibiting with Austrade in Singapore last September.
This is the last chance to collect designs that have
been Gerry Reilly’s signature works for the last ten
years. Throughout February, he will be offering 25%-50%
discount to locals, visitors and collectors on all
designs made from his previous furnace, which has “gone
to rest” after 10 years good service to glass art.

NEW YEAR SPECIALS
Welcome
to 2005 and welcome to the Year of The Rooster. We
hope that this year will bring all of our client’s
health, wealth and happiness. So to toast your
successes and good fortune we offer some of the very
finest wines from Margaret River.
Those
aficionados of Margaret River wines will no
doubt be aware of that very special label from the
Happs Winery – Three Hills. The Three
Hills Shiraz in particular, has been singled out
by Robert Parker Jnr for high praise (scoring 95
points for one vintage). However the Three Hills
range has more to it than the shiraz. Indeed we
think some of these wines are worthy of 95 points or
more.
The Three Hills Charles Andreas ($36.70) is a
Bordeaux-styled red blend of Cabernet Sauvignon,
Merlot and Cabernet Franc. Aged in French oak for 20
months prior to bottling. Complex aromas of cedar,
spice box, black currants, and vanilla. Medium to
full bodied in style.
The
1999 Three Hills Merlot ($36.70) It displays
a firm tannic edge with herbaceous elements. Give it
some time and it will provide enormous joy when
consumed.
The
Three Hills Grenache ($30.55) offers
something quite unique in the style. Lovely deep
berry flavours, with a gentle palate, an absolute
treasure trove.
The
Three Hills Malbec ($31.10) has all the
plummy depth and character of this varietal with a
little capsicum and spiciness to boot.
The
Three Hills Cabernet Franc ($30.60) is rich
and flavoursome with a slight herbaceous quality and
a friendly spice that livens the palate. This is
limited in supply so get in quick.
The
Three Hills Shiraz ($55.00) is black in
colour and intensely aromatic displaying plum
raspberry Xmas cake and spice characters, full
bodied and intensely flavoured with a soft silky
mouth-feel. Described as better than that famous
1999 vintage, this is one shiraz lovers won’t want
to miss out on.
WOODSIDE VALLEY ESTATE
Inspired by the “Great Mission to Australia” by
French explorer Thomas Nicholas Baudin, commander of
The Geographe, this unique range of premium wines
made by Kevin McKay (Forester Estate winemaker)
takes their names from crew of The Geographe.
The
Le Bas Chardonnay 2003 ($38.75) has a
powerful palate of full ripe stonefruit with lifted
citrus notes and finely balanced acidity. Aged in
new French oak which lends wonderful structure and
spice.
The
Bissy Merlot 2002 ($55.00) displays
attractive stewed plum/sour cherry fruit aromatics.
The nose displays elements of eucalyptus surrounded
by gentle dusty, earthy chocolate aromas.
The
Bonnefoy 2002 Shiraz ($58.75) shows lovely
black cherry, vanilla and cinnamon on the nose. The
palate has intense fruit characters with a natural
sweetness and French oak elegance.
The
Baudin Cabernet Sauvignon 2002 ($58.75) is a
great example of the unique characteristics of
Margaret River Cabernet. Big capsicum, blackcurrant
and dusty mocha on the nose followed by a beautiful
blend of dried fruits supported by a ripe tannin
structure giving the wine its’ length.

Now things
have quietened down a bit and the January madness has
gone, I'll bring you up to speed fishing wise.
Firstly,
thanks for all your support over the chrissy hols, we
were flat out, and the demand for fishing was a lot
higher than we expected.
It seemed
that the dads were pretty keen to get out for a fish
at least once on their holidays.
We had
some great catches in Jan, but know better than the
day we took Jake Paterson out off the Cape for his
birthday, a record day for Dunsborough Charters 16
Dhueys all over 11kg see attached pic. it looks like
the boys were to buggered to smile, but I can tell you
that they were all woopin it up big time.Happy
Birthday Jake!
We are
still operating fishing charters on average twice a
week, normally a day during the week and either a
Saturday or Sunday so if you have any interested
guests get them to ring me on 0419 244 804, we will
guarantee them a great day!!! Remember its a $130 for
the boat trip and all their fishing is

Naturaliste Charters:
Now is the
time to enjoy some Dolphin watching with Naturaliste

DIVING with Bay Dive (Swan Ship Wreck & Busselton Jetty)
"Congratulations to all out new divers who have learnt
to dive with us during January, it's been a very busy
schedule with lots of Open Water, Advanced, Wreck and
Nitrox course running all month. We are repeating our
special for the combined Wreck & Nitrox specialities
with the special price of $650 (normally $720) for the
month of February. We have had some very happy students
on these course who got the chance to fully explore the
Swan Wreck with the added benefits of extended bottom
times on Nitrox (Enriched Air).
Our Swan Wreck and Busselton Jetty night dives are still
appearing as a regular weekly night out, we've had some
great sights down there, best of all being the huge
schools (100's) of Samson fish circling the Crows nest.
If you haven't experienced the Swan Wreck at night, give

Moss Brothers
The Margaret River region, with
its close proximity to the ocean, is blessed with a
unique combination of climate and soils. Moss Brothers
cultivate these natural gifts to create premium wines of
intense flavour and distinctive character.
Moss Brothers' vineyard and winery lie in the heart of
the Margaret River wine growing region - the Wilyabrup
Valley. This valley is considered by many to be the
jewel in the crown of the entire region. Established in
1984, the vineyard and winery continue to be owned and
operated by the Moss Family. A commitment to quality and
exceptional fruit has earned Moss Brothers a reputation
for producing some of Margaret Rivers' premium wines.
Moss Brothers combine fruit from the original Moses Rock
vineyard, now 20 years old, and named after nearby
treacherous surf beach, with fruit from contracted
vineyards. All contracted fruit is managed to a greater
of lesser extent by Moss Brothers Viticultural
Management Services ensuring that fruit quality is at
its highest. Moss Brothers have processed 425 tonnes of
fruit in 2004.
When the Moss family began
their Margaret River vineyard project in 1984 they had a
lot of expertise on their side. Senior Moss, Jeff, had
been growing grapes his whole life. David Moss had
worked at both Houghton and Moss Wood for a number of
years in both the vineyards and wineries. Peter Moss
made stainless steel tanks and winery equipment
including actual wineries and boutique breweries.
Jane Moss studied wine making and grape growing at
Roseworthy Agricultural College, Australia's leading
wine science university. David Moss had the concepts
about wine styles so the vineyard was planted with these
in mind. The original line-up was very neat. Cabernet
(Bordeaux) blend, pinot noir, chardonnay and semillon
sauvignon blanc blend.
When Moss Brothers opened the cellar door to visitors in
1992, in came the wine lovers with their expertise to
influence what wines Moss Brothers would make. By
responding to public demand Moss Brothers wine styles
moved through the stages of the maturing Australian wine
palate.
The outcome? Back to where they started. A tight line-up
of stylish wines. The range settled with two notable
differences from the original. The semillon and the
sauvignon blanc became established as straight
varietals.
The pinot noir, a flavoursome and delicious wine, is now
available under the Jane Moss label as is a semillon
sauvignon blend.
A shiraz and verdelho were added to the line-up in more
recent vintages, both varieties proving irresistible
additions to the range.
Two even more recent additions to the range are Moses
Rock Cabernet Rose and Autumn Harvest Cabernet. Two new
ways to treat the wonderful flavours found in Margaret
River cabernet sauvignon.
